Fabulous fresh figs

It’s quite difficult to improve upon a fresh fig. The slightly sweet, almost honeyed, jammy fruit is amazing. We love eating plain fresh figs whenever we can find them, but the balsamic rosemary prosciutto wrapped fig is another great way to enjoy them. Halve the figs. Wrap each half with a small piece of prosciutto, then coat it lightly with balsamic glaze and rosemary. Sear them in a medium skillet until they just start to crisp. After plating, drizzle with a little more balsamic glaze and enjoy. Simple and fun!

The first post! Honey Roasted Tomato Bruschetta

It seems appropriate to start with an appetizer as a first post. So here it is in all its honey caramelized glory. This looked so good I couldn’t help myself…I kept shooting all the steps as I prepped. I tend to cook by very loosely following a recipe, or just completely making things up. Halve them lengthwise.

Toss in some salt, pepper, thyme... Pour on some honey and a little Olive Oil.

 

 

 

Spread cut side up on parchment paper... then roast! (about 1 1/2 hours)

After roasting my mouth was watering!

All set to spread on top of the ricotta and toasted baguette.

A little sliced up basil, and a some extra honey!

Served here with a light Albariño. Yum!
